You're in for a treat with this one! This Razor Clams Casino is a beautiful presentation of crispy bacon and fresh razor clam filling that's served on an open shell. You can easily bake or air fry these in the shell.
5razor clamssave the shells (you will need 10 shells)
3slicesof thin baconif you have thick bacon, use 2 slices
½cupbreadcrumbs
¼cupgrated parmesan cheese
4tablespoonsmelted butter
2tablespoonschopped fresh parsley
2tablespoonschopped green onion
2clovesgarlicminced
Salt and pepper to taste
Instructions
Gently separate the clam shells and clean them vigorously. Let dry on a metal sheet pan. Meanwhile, preheat your oven to 425°F.
In a skillet, cook the bacon until crispy. Remove the bacon from the pan and let it cool on a paper towel. Once cooled, crumble it into small pieces.
In a small bowl, combine the breadcrumbs, Parmesan cheese, melted butter, parsley, green onion, garlic, and crumbled bacon. Season the mixture with salt and pepper to taste. I like trying a little sample to ensure I have enough salt.
Finely chop the razor clams. Divide them evenly on all the shells. Spoon a generous amount of the breadcrumb mixture onto each clam, pressing it down gently.
Bake the razor clams in the preheated oven for about 8-10 minutes, or until the breadcrumbs are golden brown and the clams are cooked through. Watch closely not to overcook the clams.
Remove them from the oven and let them cool for a few minutes. Serve warm. Use a small spoon to eat.
To Air Fry
Set the air fryer to 375℉. Cook for 5-6 minutes or until the breadcrumbs are golden brown.
Notes
To Avoid them sliding around in a sheet pan: Gently crumble the foil and lay it on the sheet pan first.Make Ahead: Assemble and make these ahead and place them in the fridge overnight. Once you're ready to cook them, pop in the oven right away. They will need to add a few more minutes to the cooking time.
