If you have extra beets, you have to try this scrumptious pickled beet salad or my beet pasta!

HOW TO MAKE BEET HUMMUS
INGREDIENTS YOU’LL NEED
The two key ingredients are cooked beets and tahini. I typically purchase cooked beets that cuts down my prep time, which makes an even faster appetizer when we’re expecting company. You can find cooked beets in the refrigerated section near the produce.
Walnuts - Not only are walnuts extremely nutritious, packing , but they bring a unique flavor to this dip.
Lemon - A little bit of lemon juice adds just enough brightness to pink hummus.
Garlic - For great flavor!
Olive oil -Adds fat for a silky texture.
Spices - Add more flavor.
EQUIPMENT YOU’LL NEED
Food processor or you can use an immersion blender (at your own risk 🙂 they can be messy with beets!)

- To a food processor, add beets, walnuts, garlic, lemon, and tahini and blend until crushed.
- While the food processor is running, drizzle in the olive oil, spices, and salt and blend to combine.
- Taste and adjust seasoning as needed.
- Serve in a bowl or a deep plate, and sprinkle toppings. Serve at room temp or cold. It's that easy!
CAN YOU MAKE BEET HUMMUS WITH YELLOW BEETS?
Yes. You can absolutely make it with yellow beets. Though be aware that they tend to have a slightly milder flavor and the color will resemble a traditional hummus. The dip will still pack in the flavor of beets.
WHAT IS THE EASIEST WAY TO COOK BEETS?
The easiest way to cook beets is to roast them in the oven. Here are the steps for success:
- First, wash the beets.
- Then, wrap them in foil, and bake at 400°F (200°C) for about 45-60 minutes, or until they are tender when pierced with a fork.
- Once cooked and cooled, the skin can be easily peeled off, they're ready to use.
CAN I COOK BEETS IN A SLOW COOKER?
Yes, you can cook beets in a slow cooker. Here's how:
- First, start by washing the beets thoroughly and trimming off the greens and roots.
- Place the beets in the slow cooker, along with a small amount of water or broth to prevent sticking.
- Cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the beets are tender when pierced with a fork.
- Once cooked, allow them to cool before peeling off the skin.

My absolute favorite way to serve it is with pita chips! They’re sturdy and the perfect flavor to showcase this hummus. Alternatively, if you can’t have pita chips choose from the following: plain crackers, cucumbers, tortilla chips, sliced carrots, or other veggies.

how long does it last in the fridge?
It will last up to 5 days in the fridge if properly stored in an airtight container. If it’s not stored in a properly sealed container it will lose its freshness faster.

- ¼ cup walnuts toasted
- 2 small cloves of garlic
- ¼ cup lemon
- ¼ cup tahini
- 3 tablespoon cup extra virgin olive oil
- ½ tablespoon cumin

- ¾ teaspoon salt
- ¼ teaspoon black pepper
- Optional toppings: Feta, chopped parsley, olive oil
