This breakfast is a surefire way to impress your brunch guests (or just treat yourself, because let's face it, you deserve it).
One of the absolute best pairings for a salmon breakfast recipe, is a juicy over-easy egg topped with a bite of brine from capers, a great crunch and strong flavor from red onions, and of course, a pop of freshness from cherry tomatoes to round it all out.

Another great seafood brunch that I love making are crab melts, especially when it's crabbing season!
But, we're never short on good salmon around here, if it's smoked salmon, I love adding what's left onto a seacuterie board.

- Smoked salmon. Buy good quality smoked salmon from a trusted source.
- Eggs. A key ingredient to get the best salmon breakfast recipe! I get mine from a local farm.
- Bagels. Is there anything better than bagels, eggs, and smoked salmon...? Choose your favorite and toast with butter.
- Butter. I opt for salted every time in recipes like this to add more flavor.
- Cherry tomatoes. Cut in half to add flavor, freshness, and color!
- Red onion. A little bit goes a long way to provide good strong flavor. Slice them very thin!
- Capers. They add the perfect amount brine to this recipe, and compliment the smoked salmon beautifully.
- Everything but the bagel seasoning. This is optional but it adds a touch of that quintessential touch of breakfast. I get mine from Trader Joe's.

- To make this delicious and healthy smoked salmon breakfast, start by adding salted butter to the bagels and toasting until they are lightly browned. Watch them closely. Use an air fryer, pan, or the broil setting in an oven to toast them.
- While the bagels are toasting, cook an egg to your liking. I prefer a runny egg to add more dimension, but if you prefer it fully cooked, then that works as well.
- Once the egg is done, place it on top of the toast.
- Next, add a generous amount of smoked salmon on top of the egg.
- Top it with a sprinkle of Everything but the bagel seasoning, or your preferred seasoning.
- Then, add a few slices of red onion, a little bit of capers, and fresh tomatoes to your liking.

- I don't recommend making the eggs in advance. Reheating them can cause them to cook further and not taste as fresh.

Preferably, cook the egg on a cast iron or other skillet on low heat, sunny side up until it's cooked enough, but remains over-easy. But, a perfect egg is different to everyone, and it completely depends on your preference. Cook the egg longer if you prefer. The dish will still be delicious!
Smoked salmon usually lasts for 3-4 days in the fridge if stored properly in an airtight container. If it looks or smells fishy or foul, it's best to err on the side of caution and throw it out.
