Blueberry toast is such a flirty dish! From it's warmness, to it's savory notes from the prosciutto, and creamy tangy notes from the goat cheese, and nothing beats a giant drizzle of maple syrup to sweeten it up.
If you love toast as much as I do, then you'll love this gourmet toast that's so versatile. My other favorites breads to make and toast are no-knead rosemary parmesan bread, tahini banana bread, and pumpkin bread with cardamom. My go-to seafood favorite is this canned sardines sandwich with a kick!
You're going to love it the first time, and end up making it again, just like we did. I've had it as an appetizer for dinner and lunch. You can also serve it for brunch or even dessert! And, largely thanks to my sister-in-law for whipping this up as I coached her on what to do while on bed rest, this has easily become one of our family's go-to lunch that satisfies for hours.

I've been in a huge blueberry mood lately, since it's in season and my family love picking them fresh from a nearby farm.
Fresh berries add the perfect sweet fruity taste plus the most vibrant color to any dish or drink. Like in some of my favorite drinks - blueberry lemon drop, blueberry gin cocktail, and this homemade blueberry vodka to add to any drink!
So, let's get to making this decadent toast using my easy to follow step-by-step guide.
BLUEBERRY TOAST INGREDIENTS
- sourdough bread
- salted butter
- goat cheese
- fresh blueberries
- maple syrup
- prosciutto
- extra virgin olive oil
- fresh thyme
- fresh mint
HOW TO MAKE BLUEBERRY TOAST
Set the oven to broil, and move the top rack about 10" away from the top.
Start by layering each slice of sourdough with butter on both sides and lay them on a sheet pan.
Place the sheet pan in the oven and watch closely as the bread toasts, this takes about 30-60 seconds. Once the top is toasted, remove them from the oven, flip each slice, and toast the other side.
Set the oven to 375℉ degrees.
Layer each slice of toast with an even amount of goat cheese.
Top with a heavy drizzle of maple syrup. Then add the blueberries and top with torn prosciutto.
Drizzle a thin layer of olive oil over each slice. Then, sprinkle with thyme.
Bake for about 15-18 minutes, until the blueberries are completely warmed through and the prosciutto has started to crisp.
Remove from the oven top with an extra 2 tablespoons of maple syrup and fresh chopped mint. Serve warm!
EXPERT TIPS
- Soften the goat cheese slightly before spreading it on the toast. This is my number one best tip after making this recipe a couple of times. You can easily soften it by taking it out of the fridge 20 minutes before making the recipe.
- Toast the bread until golden brown. It's important to fully toast the bread to prevent it from getting soggy. Though over toasting it will make it hard to eat, so be sure to flip it as soon as you see it turn golden brown.
- Add a generous amount of goat cheese. This is where that beautifully tangy flavor comes in to balance out the savory and sweet of the other ingredients, and marries with the blueberries. Adding a good amount makes this blueberry toast come to life!
- Don't skip the maple syrup. Use honey if you need to, but be sure to add the sweetness!
SERVING & PRESENTATION TIPS
Presentation matters with this beautiful toast recipe.
Add stems of herbs and fresh blueberries as garnish on the dish around the toast when serving. This makes it even more elegant.
Serve directly on a plate, or lay all the toast slices on a large white platter then garnish with fresh blueberries and herbs to serve a crowd.
STORAGE TIPS
Store any leftover toast in an airtight container with a lid. Place parchment paper between layers to keep them from sticking together.
HOW TO REHEAT
Place blueberry toast in the oven at 350 degrees for about 5 minutes, until it's warmed through. I don't recommend reheating in a microwave since it can get soggy.
Another option is to air fry at 325 degrees for 2-3 minutes.
VARIATIONS AND SUBSTITUTIONS
I loved going with my cravings on this dish, because I got to add everything I wanted, no recipe in mind and boy did it turn out delicious! However, if you'd like to add different toppings or substitute any ingredient, here's a good list I recommend:
